β- Glucanase
1. Production introduction
β-glucanases have different modes of action and can be categorized into endo- and exo-type. The former exists in cereal seeds, some fungi and some bacteria, and can catalyze the hydrolysis of β-glucan in the cereal cell wall, which includes endonuclease β-1,4-glucanase, endonuclease β-1,3-glucanase. The latter is found in cereal seeds, which in turn include exonuclease β-1,4-glucanase, exonuclease β-1,3-glucanase. The use of β-glucanase in beer production can improve the filtration speed and yield of wort, thus ensuring the quality of beer. It can also be used in the production of caramel, maltose syrup and as a feed additive.
