1. Production introduction

 

  β-glucosidase) is an important component of cellulase, present in many plant bodies, and is associated with the relaxation or strengthening of cell walls during plant cell growth and development, as well as with signal recognition and the production of a number of signaling molecules in plant cells. β-glucosidases are involved in the hydrolysis of the β-glycosidic bond connecting carbohydrate residues in β-D-glucosides. They convert cellobiose and cello-oligosaccharides produced by endoglucanase and exoglucanase into glucose. β-Glucosidase not only has a glycolytic effect on cellulose, but is also closely related to the metabolism of many specific substances in fruits and vegetables. Under the action of this enzyme, it can make many precursor substances in fruits and vegetables such as glycosides, anthocyanosides, bonded volatile substances in the release of the active ingredients.
